Spectacular Sloppy Saturday

What a Spectacular day here in MI-  it is so beautiful out for being the end of Feb.  ;  sunny, blue skies , high of about 45, low wind.  PERFECT for today.  My kids were out playing in the yard; wanting to pull out every toy they could find.  Sadly though, we had to tuck them fast away as we are under a winter storm warning starting tomorrow for snow and ice.  Oh well the few spring days were nice while they lasted. 

What was sloppy- my run!!!  I ran 12 miles- that is spectacular in itself.  But it was really sloppy; it entailed some walking breaks.  Here are my excuses for the sloppy-  a)  wasn't planning on running until tomorrow but then saw the forecast  b) ran at 3pm ( after eating during the day)  and c) my left hip and knee kept bothering me during the run.  Not sure what is up with that ,  need to check the amount of miles on my shoes.  Really though, I cant complain  12 miles in 2:05

Amy K. asked yesterday for the Green Lake Casserole recipe because she vacations in Green Lake, WI. . Well, not sure if it from that town or not  but the recipe is my husband great grandmothers/ grandmothers and they live  in WI (Green Lake is only about an hour from where they live, so this is very possible).  We normally refer to this casserole as "Grandmas Casserole" but when I got the recipe that is what it was called "Green Lake Casserole"
So here we go
 4 Cups of Diced chicken
2 cups of diced celery (saute)
1 Tpsn diced onion (saute)
1 can sliced water chestnuts
1 cup mayonnaise
2 cups cooked rice
1 Tpsn Lemon Juice
1 tsp salt
2 cans of Cream of Chicken soup


Mix all the ingredients together and place in a  9x13 pan.   Melt 4 Tpsn butter and mix with 2 cups crushed corn flakes or Wheaties or almonds;  toss over chicken mixture.   Bake at 350 for 45 minutes

This is one of our family favorites.  It also freezes very well.

  3. I loved the weather this past week too! Your run sounds absolutely perfect for the sloppy day! I think these are what make us BETTER runners, right? (Please say yes!)
